What a beautiful experience to get a cooking course with Souk Cuisine! You meet Gemma at 10am in the Medina to go to the local market, then you go to the riad to prepare the delicious meal you will have for lunch! You leave the riad and the “cooking class girls” around 3pm. Receipts depending on season and on market.

Tagine with sardines and rice
1kg sardines, filleted + 100g rice, cooked + 1 preserved lemon, the flesh only + 8 garlic cloves, crushed + 1 teaspoon ground cumin + 1 teaspoon ground paprika + 1/2 teaspoon ground chili + 1 teaspoon tumeric + 1 teaspoon ground pepper + 2 tablespoons minced olives + 1 tablespoon parsley, finally chopped + 1 tablespoon coriander, finely chopped
For the sauce :
5 tomatoes, grated + 3 bayleaves + 4 garlic cloves, crushed + 1 teaspoon ground paprika + 1/2 teaspoon salt + 1/2 teaspoon ground cumin + 1/4 teaspoon ground chili + 1/2 teaspoon thyme + 5 tablespoons olive oil
Mix the rice in a bowl with flesh of the preserved lemon, spices, minced olives, parsley and coriander. Mix well.
Fill the sardines with the rice mixture till a sandwich. Place in the tagging the grated tomatoes with all the ingredients for the sauce and let simmer for 10 minutes. Add sardines and let simmer until cooked, about 20 minutes. Also you may fill vegetables like green pepper, tomatoes, courgettes with the rice and let simmer in the tomatoes sauce for about 45 minutes!)
